This most of Extra Virgin Olive Oil is obtained from cold pressing of exclusively Taggiasca quality olives harvested at the proper point of maturing by hand shaking. Light yellow in colour, delicate in taste, its peculiarities are fragrance and a fruity taste not too intense, with a tendency to sweet smell, with an aftertaste of pine nut and raw artichoke, lightly strong to satisfy the palates looking for traditional tastes. Bottled in the traditional costolata bottle with a mechanical cap, as people used to do according to the old Ligurian way.
